EVOO
2 large nicely shaped red bell peppers, halved. top and bottom of pepper. Remove seeds and membrane
20-ish cherry or grape tomatoes
8 anchovies
2 medium size garlic cloves, mashed with coarse salt to a paste.
Fresh basil, chiffonade
Freshly ground pepper

Directions:
Directions:
Place 4 halved (8 pieces) cherry tomatoes in each halved pepper.
Place 2 anchovy filets over top of tomatoes.
Mix garlic paste with EVOO and drizzle on top of tomatoes.
Top with generous amount of basil
Sprinkle with freshly ground pepper
Bake until tender in 350º oven
Serve immediately
