2 T. butter
1 lg. onion (chopped)
1 t. nutmeg
4 1/4 lb. butternut squash (peeled, seeded and cubed),
4 1/2 c. vegetable broth
1 Gala apple (peeled, cored and chopped)
1/2 c. apple juice
sour cream
fresh chives

Directions:
Directions:
Melt butter in large pot over medium high heat. Add
onion and nutmeg. Saute until oinion begins to brown,
about 5 min. Add squash, broth, apple and apple juice.
Bring to boil. Reduce heat and simmer uncovered
about 30 minutes until soft. Working in batches, puree
until smooth in blender. Return to pot and bring to
simmer. Thin with broth if needed. Season with salt
and pepper. Garnish with sour cream and chives.
