Pineapple Lemon Chicken Recipe

Ingredients:  
4 chicken breasts, skinless/boneless. .
2 eggs, beaten
1/2C flour and bread crumbs
Vegetable oil for frying
1 t sesame seeds, lightly toasted
1 tin pineapple chunks, drained

Sauce:
8 t Soy sauce
1 T brown sugar
Juice of 1 lemon
Lemon zest, scant
Ginger, scant

Directions:
Directions:
Dredge flattened chicken pieces in egg and flour mixture and deep fry. Drain on paper towels and keep warm.

Mix all ingredients for sauce. Place in sauce pan and warm over medium heat, stirring occasionally.

Plate chicken, pour warm sauce over chicken evenly, sprinkle with toasted sesame seeds and
garnish with pineapple rings.

Adjust seasoning to taste.

Double sauce amounts if desired to serve as extra
on table.
