Cook bony pieces of chicken or turkey in 1 T. salt and 2 c. water until tender. Chop the chicken or turkey along with 3 hard boiled eggs and 1/2 c pimento. set aside.

2c. giblet broth
4 c. meat juices ( add water if necessary)
salt and pepper.1/3 c. flour mixture with 1 c. cold water. yellow food coloring.

Heat giblet broth and meat juices to boiling. Mix flour and water in bowl, and shake to blend. Slowly pour flour mixture into stock, stirring constantly. Turn heat down to simmer. Salt and pepper to taste. Add 3 or 4 drops of the food coloring. Simmer and stir 5 minutes. Add chicken pieces, eggs, and pimento.
