2 15oz. cans black beans, drained
3/4c. onion, chopped
2 bay leaves
4 cloves garlic, minced
1 tbsp. cilantro
14oz. can diced tomatoes
1/2 c. frozen corn niblets
1/2 tsp. cumin
1/2tsp.chili powder

8oz. jalapeņo jack cheese,shredded
cooked rice

Saute onions, garlic, and bay leaves in oil.
Add black beans, cilantro, tomatoes, cumin, chili powder,and corn.
Simmer until heated through and flavors meld.
Serve over rice and top with cheese.
