4 Chicken breasts, skinned and boned.
Broccoli flowerettes
1/2 C Flour
1 t Pepper and salt
1/2 C Apricot preserves
1 T Dijon mustard
1/2 C plain yogurt
1 tin sliced water chestnuts
2 T sliced Almonds, toasted

Directions:
Directions:
Preheat oven to 375º

Pam a medium size baking dish.

Place the flour, salt and pepper into a plastic bag and coat the chicken breasts. If desired, cut breasts into 4 pieces.

Layer broccoli and chicken in baking dish.
Bake in 375º oven for 15 minutes.

Combine preserves, mustard, yogurt and sliced water chestnuts. Spread mixture evenly on broccoli and chicken and bake for an additional 15 minutes.

Sprinkle with toasted almonds.

Serve with rice or short pasta
