2 1/2 c Sugar
1/2 c. clear corn syrup
1/8 t. salt
2/3 c. water
2 egg whites
1 1/2 c. chopped pecans
1 t. Vanilla

Directions:
Directions:
Combine sugar, corn syrup, salt and water. Cook until a small amount forms a soft ball(234 degrees to 240 degrees) when dropped from spoon into a glass of cold water. Take 1/2 cup of this mixture and set aside. Cook the rest until it forms a hard ball (250 degrees to 265 degrees). When dropped in cold water. In bowl, beat egg whites until stiff or forming peaks, beating constantly. Pour the 1/2 c mixture over the stiffly beaten egg whites. Continue beating while adding vanilla and keep beating until the mass thickens and becomes heavy. THIS WILL TAKE SOME TIME DON\'T HURRY IT OR THE WHOLE THING WON\'T SET UP RIGHT.It cools as this process happens. Drop with a teaspoon onto a lightly buttered cookie sheet or baking pan.
