1 1/2 cups all-purpose flour
1/2 tsp salt
2 tsps. baking powder
1 cup plain yogurt or sour cream (I use fat-free)
1 cup sugar
3 eggs
1 tsp. vanilla
1/2 tsp. lemon or orange zest
1/2 cup canola oil

1/2 cup orange or apricot marmalade or a mixture of the two.
1/4 cup plain yogurt or sour cream

1, Preheat oven to 350º. Grease a loaf pan.
2. Mix flour, baking soda and salt in a medium-bowl.
3. In a separate bowl, mix 1 cup yogurt or sour cream, sugar, eggs, vanilla, zest and oil.
4. Scoop sugar mixture into flour mixture and stir just til combined.
5. Pour into loaf pan and bake about 45 minutes.
6. Let it cool for a while, and meanwhile, melt marmalade in small saucepan. When melted, stir in 1/4 cup yogurt or sour cream.
7. Place cake on a platter, pour marmalade mixture over. Enjoy

This is a delicious cake. Moist on the inside with a slight crunch on the outside. Uses no milk, and is kind of flexible in the ingredients.
