1/2 c. celery, finely chopped
1 large onion, finely chopped
2 T. Apple Cider vinegar
2 T. lemon juice
1 1/2 cups ketchup
3 to 3 1/2 lbs. semi-boneless chuck roast
3 T. brown sugar
1 1/2 tsp. mustard
3/4 c. water
1 tsp. salt
3 tsp. Worchestershire sauce

Preheat oven to 350ºF.
1. Mix sauce ingredients in medium saucepan and simmer 5 minutes.
2. Cut roast in 2 or 3 pieces and place in roasting pan. Pour sauce on roast. Cover and bake at 350ºF for 2 1/2 to 3 hours, turning beef every half hour.
3. During the last 1/2 hour, remove cover and turn beef more often; sauce will thicken.
4. Remove from oven and cool enough to handle. Shred meat using two forks; mix sauce with shredded meat.
