2 firm-ripe pears
1 T coarse freshly ground black pepper
2 T unsalted butter
1 T lemon juice
About 1/2 C blue cheese, crumbled
Flash fried Sage leaves

Halve pears lengthwise and core.

Cut pears lengthwise into 1/4" thick slices and sprinkle pepper on both sides.

In a large, non-stick skillet heat 1 T butter over moderately high heat until foam subsides and saute about half of pear slices on both sides until golden brown, about 3 minutes total.

With a spatula transfer pears to a plate and drizzle with half of lemon juice. Saute and drizzle remaining pear slices in the same manner.

Divide pears among 4 plates. Sprinkle pears with blue cheese and serve with fried Sage leaves

FRIED SAGE LEAVES
In a small pan, place 1/2" of vegetable oil
1/2 C loosely packed fresh Sage leaves
Coarse salt to taste

In a saucepan heat 1/2" oil until hot but not smoking.

Working quickly, fry Sage leaves, 5 at a time, in and out, about 2 seconds, transferring to paper towels to drain. Immediately sprinkle Sage leaves with coarse salt.
Makes about a 1/2 C
