1 c. whole wheat flour
1 c. all purpose flour
1 tbsp. baking powder
3 tbsp. sugar
1/4 tsp. salt
1 1/4 tsp. cinnamon
1 large egg
2 1/2 tbsp. vegetable oil
1 c. skim milk
1 apple, peeled, cored and cut in bite size pieces

Heat oven to 400 degrees. Coat muffin tin with nonstick cooking spray or use paper inserts.
Mix first 5 ingredients in a bowl. Stir in 1 tsp. cinnamon.
In another bowl whisk egg, oil and milk until blended. Add to flour mixture and stir just until mixed (don't overmix). Fold in apple pieces.
Fill each muffin cup about 3/4 full and sprinkle with remaining cinnamon.
Bake 20 minutes until a pick inserted in center comes out clean. Cool in pan on wire rack for 5 minutes, then turn out on rack to cool completely.

If you substitute about 1/2 cup natural applesauce for the oil you virtually have fat free muffins.
