1 Kg. de sangre de pollo
1 ½ taza de cebolla picadita
1 ½ taza de cebollita china (blanco y verde picadito)
2 ajíes frescos picaditos
1 cucharadita de pimienta
1 cucharadita de comino en polvo
1 cucharada de ajo molido
un poco de culantro picado
1 cucharadita de orégano
rocoto picadito
1 cucharada de ají colorado molido
1 cucharada de ají amarillo fresco molido
1 taza de aceite (o menos)
hierba buena picada (al gusto)

Directions:
En una sartén amplia se fríe la sangre en el aceite cortándola allí con una paleta en cuadros o cuadritos. Encima se le agrega la cebolla, ajíes, orégano restregado y se voltea con la paleta para freírla del otro lado. Luego se le echa el rocoto, cebollita china, hierba buena picadita y cuando todo esté bien frito se sirve en una fuente rodeada de papa sancochada o yuca frita. Se adorna con hojas de lechuga alrededor.
