4 broccoli heads, cut into small florets
1/2 to 1 c. carrots, finely grated
1 c. salted cashews
1 c. raisins
1 c. mayonnaise
Juice of one lemon, or less

Directions:
Directions:
1. Mix together broccoli, finely grated carrots, cashews and raisins.
2. Mix together the mayonnaise and lemon juice; start with the juice of half a lemon and add more if you want the dressing less thick.
3. Spoon or pour over the broccoli mixture and chill in refrigerator for at least one hour. Mix before serving.

This salad is very easy to make and a great dish to take to parties. For variation, if you want more of a "bite" to this salad, use chopped red onions and in place of the cashews use 1 lb. crumbled bacon. Add a dash of cayenne pepper to the mayonnaise and lemon dressing. This is one of Gabe's favorite salads!
