4 slices bacon - fried and diced
1/2 c scallions
1 lb green beans
1 T cold water
1 t salt
1/4 t pepper
1 1/2 t red wine vinegar
mint

Directions:
Directions:
Fry bacon, remove, leaving fat. Fry the scallions about 3 minutes. Add the beans and stir. Add the water and cover, cooking about 5 minutes. Uncover and continue to cook until the beans are tender but still resistant to the bite. Sprinkle with salt and pepper, stir in vinegar and remove from heat. Serve garnished with the bacon bits.
