1/2 - 1 # fresh mushrooms - coarsely sliced
2-3 T butter
8 slices of bread - cut in 1" squares
1/2 cup each of chopped onions, celery, green peppers
1/2 mayonaise
1/4 t salt
2 eggs
1 1/2 c milk
Mushroom soup - undiluted
Grated yellow cheese

Directions:
Directions:
Saute the mushrooms in butter. Butter 3 slices of bread, that have been cut into 1" squares in a casserole dish. Combine mushrooms with onions, celery, green pepper, mayonaise and salt and pepper. Spread over the bread squares. Cut 3 more slices of bread into the little squares and add to the casserole. Pour the 2 slightly beaten eggs and milk over the casserole and then refrigerate at least 1 hour. Spoon a can of mushroom soup over the top before putting it in the oven. Top with 2 more slices of bread, cut in the cubes. Bake at 325º for 50-60 minutes. Add the cheese and bake about 10 minutes longer.
