3 tbsp peanut oil
1 lg yellow onion cut in half, peeled and sliced thin
1 rounded tbsp chopped garlic
3 1/2 tbsp good curry powder
1 tsp red pepper flakes
1 lb lean ground beef
4 c ground tomatoes
1 1/2 c strong chicken stock
2 c baby spinach (two large handfuls)
1 lb just cooked still hot capellini pasta
3 oz of unsalted butter, cut in small pieces
Salt to taste, if needed

Directions:
Directions:
Heat the oil in a large, deep, heavy frying pan. Add onions and garlic, saute until limp. Then add curry powder and red pepper flakes, stir in and saute another minute. With a fork break in ground beef, saute until meat loses its raw color, and is lightly golden. Stir in tomatoes and chicken stock. Cook over medium high heat for about 5 minutes, until hot and reduced slightly. Salt if needed.
Turn off heat and stir in spinach. Now toss in, (cooked and still hot) capellini. Then stir in pieces of butter, until mixed.

Serve with a simple butter lettuce salad, and for dessert, fruit sorbet with almond cookies.Enjoy!©
