1/2 c (stick) sweet butter, room temperature
3/4 c sugar
2 large eggs
1 tsp lemon extract
1 1/2 tsp grated lemon zest
1 c All-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 c plus 2 tbsp sour cream

Directions:
Directions:
Preheat oven to 325º. Grease and lightly flour a loaf pan. Beat the butter and sugar in a large mixing bowl until light, about 2 minutes. Add the eggs and beat well. Add lemon extract and zest, and stir in. Stir together the flour, baking powder, baking soda and salt in another bowl. Add to sugar-butter mixture, alternately with the sour cream and beat until well mixed. Then spoon into the loaf pan.

Bake for about 45 to 50 minutes, or until a toothpick comes out clean when inserted in the center. Don't over bake! Cool on a rack, slice and serve. Served with fresh berries, or berry sorbet.©
