1 (2lb) head broccoli, stems removed
1/4 c butter (1/2 stick)
1/4 c all purpose flour
1 c chicken broth
1 c milk
Salt and freshly ground black pepper
Paprika
1/8 tsp nutmeg
1/2 c grated Parmesan cheese
3 tbsp or up to a 1/4 c dry sherry
12 slices cooked chicken
1 c slivered toasted almonds
1/2 c heavy cream

Directions:

Preheat oven 350º Butter a shallow 2 qt casserole and set aside.

Break the broccoli into florets and place them in a steamer. Steam until just tender, about 5-7 minutes and drain.

In a medium-size saucepan, melt the butter over moderate heat, then add the flour and stir for 1 minute. Gradually add the broth and milk and stir until thickened. Season with salt and pepper; add the nutmeg, 1/4 c of the cheese, and the sherry. Stir until cheese melts, and remove from heat.

Arrange the broccoli in the casserole in a single layer, sprinkle the remaining 1/4 c of the cheese over the top, arrange the chicken slices evenly over the broccoli, and sprinkle the toasted almonds over the top.

In a medium-size mixing bowl, beat the heavy cream with an electric mixer until soft peaks form, fold into the cheese sauce, pour evenly over the chicken and almonds, then sprinkle with paprika for garnish. Bake until bubbly and golden brown, about 35 minutes.

You can use leftover turkey for the meat as well. I use this recipe after every Thanksgiving! Also during the spring I substitute asparagus for the broccoli.
