3 or 4 medium potatoes
1/3 C chopped onions
1/2 C sour cream
2 C asiango/mozzarella cheese blend
1/3 C diced jalapeño peppers

Quarter and half cook half of the whole potatoes in water over medium heat (15 to 20 minutes)

When potatoes are cooled shred into large mixing bowl.

Cover bottom of small sauté pan with olive oil

Sauté onions over medium heat until them become translucent, add jalapeños and sauté for two more minutes until peppers are softened

Remove from heat and set aside

In a sauce pan over low head begin to melt the cheese.

Add sour cream until the mixture becomes

Add onion/jalapeño mixture to the cheese and pour into the potatoes.

Mix well. Add salt and pepper to taste.

Pour and spread in greased casserole dish and bake at 350 degrees for approximately 20 minutes.
