24oz Elbow Macaroni, or similar type pasta
(cooked al dente, tossed with 1/4 cup olive oil)

In a large skillet or heavy pot, saute
1/3 c olive oil, heat then add
2 medium chopped yellow onions
2 medium chopped green bell peppers
5 tsp chopped garlic

Saute till soft, then add
2 lbs lean ground chuck
1/3 c chili powder

Mix Well and saute till meat is just done, then stir in
2 - 35oz cans chopped peeled whole tomatoes
2 cans tomato soup
2 cups tomato sauce
Heat, stirring occasionally

Then mix in
2 c fresh or frozen corn kernels
1 1/3 c thinly sliced green onions
1 c drained sliced black olives

Preheat oven to 325º.
Heat and adjust taste with salt, pepper, chili powder or sugar, (a little dash of sugar can bring up a better balance of flavors if desired). Mix in cooked pasta. Put in large flatter type casserole. Just before heating, sprinkle top with
1 cup each of grated mild cheddar and jack cheese
1/3 cup green onions

Bake in a preheated 325º oven for about 1-1/4 hours. Served with a simple green salad and French bread.©
