3 to 4 tbsp olive oil
3/4 tsp red pepper flakes
1 tbsp chopped garlic
1 medium chopped yellow onion
2 tbsp peeled and minced fresh ginger
1 pound ground chicken breast
1/2 c chopped mushrooms
1/2 c chopped zucchini
1/3 c chopped red pepper
1/3 c chopped green pepper
1 c canned ground peeled tomatoes
(Muir Glen Organic or 6 in 1)
2 1/2 cups chicken stock
1/4 c chopped cilantro
1/4 c thinly sliced green onions
2 tsp sugar (optional)

Heat olive oil in large skillet over medium heat. Add red pepper flakes, and garlic. Toss in onions and saute till tender. Add ground chicken breast and ginger. Stir fry till lightly golden. Stir in mushrooms, zucchini and peppers. Saute for 5 minutes. Pour in tomatoes and chicken stock. Simmer for 15 minutes. Stir in the cilantro and green onions. Adjust with salt and pepper. Pour over, just cooked, pasta. Serve with grated Asiago cheese.
