8 oz crumbled blue cheese
3 tsps finely chopped garlic
1/3 cup virgin olive oil
1 tbsp red wine vinegar
1 tbsp fresh lemon juice
1/2 cup chopped red onion
1/3 cup chopped parsley
freshly ground black pepper to taste

Directions:
Directions:
Sprinkle blue cheese into a shallow 6-8 inch dish, with about 1-1/2" sides. Mix together garlic and virgin olive oil, and drizzle over blue cheese. Combine remaining ingredients and pour over the blue cheese. Refrigerate for up to 1 hour to overnight. Sprinkle with the black pepper and mix well.

Use as a spread on chicken breast or steak sandwiches, or use as a spread on crackers or toasts for appetizers.©
