3 cups sour cream
1 4-ounce can green chili peppers, sliced and chopped, no seeds
4 cups cooked rice, packed
salt and pepper
3/4 pound Cheddar cheese, grated

Directions:
Directions:
Mix sour cream and peppers. Season rice with salt and pepper. Put a layer of rice in bottom of a 1-1/2 quart casserole, then a layer of sour cream and a layer of cheese. Repeat with cheese on top. Bake at 350 degree until bubbly. You can make ahead of time, refrigerate and bake when ready to serve.
