Nonnie's Ricotta Cheese Pie Recipe

4 lbs Ricotta Cheese (drained)
1 T Grated Orange Zest
3 tsp. Vanilla
12 Egg Whites
2/3 C Cornstarch
1 1/2 C Sugar

Bottom mixture: 3/4 C Chopped Pine Nuts
1/4 tsp. cinnamon
1/4 tsp. sugar

Heat oven to 350 degrees

Beat ricotta until smooth with electric mixer

Beat egg whites, zests and vanilla in separate bowl with wire whisk until foamy.

Whisk sugar + cornstarch together in separate bowl.

Beat egg mixture into ricotta mixture.

Whisk sugar mixture into ricotta mixture.

Pour into buttered + floured free form pan or for higher cake use *tube pan.

For freeform pan: Wrap bottom of pan with tinfoil up the sides.

Place in shallow pan of 2 inches of water.

Bake for one hour + 15 minutes.

Remove from oven + sprinkle top with pine nut mixture.

Bake another 20 minutes or until golden and toothpick comes out clean.

*Tube pan. Place pinenut mixture in pan first and then carefully pour ricotta mixture in pan. Place in shallow pan of water and bake as per instructions. Cool slightly and then turn upside down on cake plate when toothpick comes out clean,

This recipe comes a little from the Soprano's cookbook, my friends (Paterno's) recipe and Grace Musto's recipe. It is my own rendition and great for Easter or Christmas holidays.
