Olive Oil
2 lbs stewing beef-small cubes
1 lb Italian Hot Sausage (out of casings and cut up)
3 Stalks of chopped celery
1 Large chopped onion
1 Yellow, 1 green and 1 red pepper-chopped
1/2 Jalapeņo pepper-chopped VERY small
5 Cloves chopped garlic
3/4 C Jack Daniels Whiskey
Salt and Pepper to taste
1 T oregano
1/4 C Chili powder
3 Cans beans - one each of Kidney, Pinto + Cannellini
2 Lg. Cans crushed tomatoes
2 cups water
2 T cornmeal

Directions:
Directions:
1. Simmer beef in oil until tender.

2. Add sausage pieces and cook through.

3. Add onions, garlic and celery. Cook until clear.

4. Add chopped peppers. Simmer for 10 minutes.

5. Add tomatoes and the juice from all cans of beans.

6. Add oregano, chili powder, salt + pepper.

7. Stir and simmer for 15 min.
Add only 1/2 c Jack Daniels

8. Simmer for 30 minutes.

9. Taste and adjust seasonings.

10, Add beans + simmer for 5 minutes
Taste. If too rich, add more water.

11. Add remaining 1/4 cd. Jack Daniels
Turn off stove

12. Sprinkle corn meal over mixture + stir.

13. Let sit for 1/2 hour.

14. Serve with chopped cheese + onions and corn
bread.

This recipe comes from the Belleair Golf Club in Florida. It was a much needed energy boost, served on the turn after the 9th hole every Tuesday afternoon, It soon became a Super Bowl favorite at my house.
