4 egg yolks
1/3 Cup sugar
2 tsp. vanilla
1/4 tsp almond extract
1/2 Cup heavy cream
2 1/4 Cups flour sifted with:
1/2 tsp salt
Oil for frying. (We always used lard)
Powdered sugar for dusting

With an electric mixer, beat egg and yolks until they are thick and pale. Beat in the sugar a little at a time. Add in vanilla and almond extract. Beat mixture until it's thick and fluffy. Fold in the cream and sift flour mixture over the egg mixture and fold it in thoroughly. Chill covered overnite.
Dust dough with flour and roll out 1/2 of it to 1/16" thick on a well floured board or pastry cloth. With fluted pastry wheel, cut into 2 1/2" wide strips. cut strips diagonally into diamonds. Cut a 1" slit in middle of each. Pull 1 point of diamond thru slit & tuck end under. Do 2nd 1/2 of dough. In fryer at 365 º, fry, turning once, till golden. Drain on paper towels set over newspaper. When cool, dust with powdered sugar. Store in airtight container.
