½ cup shortening
1 ½ cup sugar
1 large eggs
1 or 2 (1 oz) bottles of red food coloring
1 tsp. vanilla extract
2 ½ cups sifted flour
1 tsp. salt
2 tsp. cocoa
1 cup buttermilk
1 tsp. white vinegar
1 tsp. baking soda

Cream Cheese Frosting:
1 (8 oz) pkg. cream cheese, softened
½ cup butter or margarine, softened
1 (16 oz) pkg. powdered sugar
1 tsp. vanilla extract

Directions:
Directions:
Beat shortening until fluffy at medium speed with electric mixer. Slowly add sugar, beating well. Add eggs one at a time, beating after each egg until well blended. Stir in food coloring and vanilla.
Combine the flour, salt, and cocoa, and set aside.
Combine buttermilk, vinegar, and soda in a 4-cup liquid measuring cup. Mixture will bubble. Add flour mixture to shortening mixture, alternately with buttermilk mixture, beginning and ending with the flour mixture. Then beat for 2 minutes at medium speed. Pour batter into 3 greased and floured 8-inch pan. Bake at 350º for 25 minutes. Cool in pans on wire rack for 10 minutes. Remove from pans and cool completely.

Cream Cheese Frosting:
Beat butter and cream cheese until fluffy. Gradually add powdered sugar, beating at low speed until blended; add vanilla, beating until blended. Spread cream cheese frosting between layers and on top of cake. Garnish with chopped pecans, if desired.
