3 to 5 cups cooked rice (use the amount you want, I like to use 5 cups), rinsed 3 times after cooking to get rid of the starch
12 large eggs
2 tsp. vanilla
2 cups sugar
4 cups whole milk, scalded
1/2 to 1 stick butter

Directions:
Directions:
Preheat oven to 350ºF.
1. Scald the milk and remove from stove. Add hot milk, butter, sugar and vanilla in a large bowl. Cool mixture.
2. Add rice and mix until all is blended. Pour into greased pie plate or 9 x 13" dish.
3. Bake at 350ºF for until light brown and firm. Baking time is 45 to 60 minutes. Insert knife to center, if comes out clean it's done.

This was breakfast on Easter morning if the boys - John, Steve, Ronnie and my Dad didn't find Mom's hiding place for the goodies!
