8 eggs
3/4 cup sugar
1 1/2 tsp. salt
1 1/2 tsp. vanilla
3 3/4 cups flour
3 3/4 cups milk

Directions:
Directions:
Mix eggs on low, then add sugar, salt, and vanilla; mix well on low.
Alternate adding milk and then flour. Mix well, scraping bowl.
Heat pan to med-high with a dab of butter. Pour a little bit of batter in pan just to cover bottom (similar to a crepe). Tilt skillet quickly in a circular motion to distribute batter over skillet; brown lightly on both sides.
You can roll Palacsintas in butter, cinnamon or any jelly. Roll up lightly and dust with sugar, and serve warm. Enjoy

This is an OLD family recipe my mother always made. I had two pans cooking at the same time because the boys couldn't get enough of this great pancake. Sometimes lunch, sometimes dinner, great during Lent.
