1 C. Uncooked Uncle Ben’s© converted rice
2 T. Olive Oil
4 Chicken breasts
8 oz. Pineapple chunks
1 C. Apricot pineapple jam
2 T. Soy sauce

Directions:
Directions:
Prepare rice according to directions

Heat olive oil in a large non-stick skillet. Add chicken breast and cook for 3 to 4 minutes on each side. Add juice from pineapple to chicken in skillet just before chicken has finished cooking.

Mix pineapple chunks, jam and soy sauce. After pineapple juice has evaporated from skillet, add jam mixture to chicken. Cook until sauce is a glaze. Remove from heat and serve with rice.
