Drain and Rinse Thoroughly:
1 can of black eyed peas
1 can of black beans
1 can of cannelini beans
1 can of great northern beans
1 can of shoe-peg corn

Chop finely
1 medium onion
½ bell pepper (any color)
3 stalks of celery
3-6 cloves of garlic

Dressing
Dissolve sugar over low heat (do not boil) in a saucepan, combine:
1 C. sugar
½ C. cider vinegar
½ C. red wine vinegar
½ C. oil (olive or vegetable)
Salt and pepper to taste

Directions:
Cool liquids and then fold together all of the above ingredients and serve with tortilla chips. Store in any air tight container. Make at least one day in advance for best flavor.
