2 C. Pancake Mix (see recipe for dry mix)
4 T. Melted Unsalted Butter
2 Eggs, Separated
2 C. Buttermilk

Directions:
Directions:
Mix Buttermilk and egg whites with a fork. Mix yolks and butter with a fork. Pour both on top of the dry ingredients. Mix for a long 10 count.
Let batter rest while griddle is heating to 350º. Rub griddle with more unsalted butter and rub into surface with a paper towel. Ladle batter in desired amounts. Flip only once, when the edges appear dry and bubbles show on the surface of the pancake.

It is very important not to overmix the batter. Resist the temptation to mix it beyond 10-12 seconds. Lumps are okay. The rest time for the batter while the griddle is heating ensures proper hydration of the flour. Be sure that the butter is not so hot that it scrambles the egg yolks.
