Buttermilk Bran Muffins Recipe

- 1 cup - all bran cereal
- 1 cup - boiling water
- 1 cup - finely chopped dates
- 2 eggs
- 3/4 cup - vegetable oil
- 1 tsp - salt
- 2 cups - buttermilk
- 2 1/2 cups - whole wheat flour
- 4 tsp - baking soda
- 2 1/2 cups - bran flakes cereal

- combine hot water all bran, dates in large bowl, leave until cooled
- mix in eggs, oil, salt
- combine flour, baking soda
- add buttermilk alternately with flour mix
- stir in bran flakes
- chill for 4 hours before baking

Preheat oven 350 F

- scoop into grease muffin tins
- bake for 18 minutes

This mix can be kept in the fridge for up to 6 weeks before baking
