8 Cups water
1/3 cup coarse kosher salt
1/4 cup rice vinegar or white vinegar
1/4 cup soy sauce
8 Star anise, broken
2 3 inch pieces stick cinnamon, broken
1 Tbls sugar
2 tsp fennel seeds, crushed

Directions:
Directions:
Combine all ingredients in large bowl, stir until salt and sugar are dissolve.

When using with chicken, rinse chicken well inside and out, place in large zip lock bag, pour marinade in, seal and store in refrigerator for 6 to 8 hours.
