9" frozen pie shell
8 slices bacon
2 c. southern style (cubed) hash browns
2 T. chopped onion, or 2 tsp. dried onion flakes
1 c. grated cheddar cheese
1 T. flour
3 eggs
1 12 oz. can evaporated milk
salt & pepper to season

Directions:
Directions:
Fry bacon till crisp (or microwave). Crumble bacon. In skillet cook hash browns with onion according to package directions (or until potatoes are browned and tender). Add crumbled bacon to skillet. Toss the cheese and flour together. In pie shell layer 1/2 the potato mixture, followed by half the cheese mixture. Repeat. Mix together the eggs, milk, salt and pepper. Pour into pie crust. Bake at 425 degrees for 15 minutes, then reduce heat to 350 degrees and bake an additional 30 minutes.
