Orange Pineapple Bread Recipe

1 small can chunk pineapple (own juice)
2 c pitted prunes/dates
1 jar of orange jam
1/2 boiling water
1/3 c honey
2 egg whites
1 t vanilla
1 c whole wheat flour
1 c cake flour
1 t baking soda
1/4 t salt

Preheat oven to 325
Boil water and put in prunes/dates. Turn down to a simmer, place lid on pot & set aside. Combine orange jam, honey, egg whites & vanilla. Take dates out of steaming water & combine with the above mixture. Add pineapples. Sift flour, soda & salt. Add the orange mixture to the flour mixture. Fill 2 bread loaf pans half full. Bake for 30 minutes or until toothpick comes out clean.
