1 box frozen spinach
1 T. olive oil
1/4 c. chopped green onion
1 garlic clove, finely chopped
2 slices bacon, crumbled
1/2 c. chopped cooked chicken
3/4 c. shredded Monterey jack cheese
1/4 c. mayo
1 can crescent rolls
1 egg, beaten

Preheat oven to 375º. Spray cookie sheet with cooking spray. Cook spinach in microwave as directed on box. Squeeze with paper towel to drain well. In a skillet, heat oil over medium heat. Add onion and garlic, cook 2 to 3 minutes. Remove from heat. Stir in spinach, bacon, chicken,cheese,and mayo.
Unroll dough on work surface, pinch all seams to seal. Spread spinach mixture on rectangle, roll up; seal along edge. With a serrated knife, cut into slices. Place on cookie sheet and brush with egg. Bake 10 to 15 minutes, or until golden brown. Remove from cookie sheet, and serve warm.
