1 cup granulated sugar
1/2 cup applesauce
1/4 cup butter
1/4 cup molasses
2 cups all purpose flour
4 tsp. ground ginger
1 tsp. ground cinnamon
1 tsp. baking soda
1/4 tsp. salt
1 cup fat free buttermilk
2 large eggs, lightly beaten
whipped cream

Directions:
Directions:
Beat first 4 ingredients at med. speed until blended. Stir together flour and next 4 ingredients in a med. bowl. Combine buttermilk and eggs in a separate bowl. Add both mixtures alternately to butter mixture. Beginning and ending with flour mix. Beat at low speed until blended after each addition. Pour batter into a lightly greased 10 in. cast iron skillet. Bake at 325º for 35-40 minutes or until wooden pick comes out clean. Serve with whipped cream.
