1lb of sausage (should be Italian but we often use Kielbasa)
15 oz can of tomato sauce (whole tomatoes for chunkier)
1/3 of a pack of Philadelphia cream cheese
12 oz of penne or other pasta
1 medium onion
4 cloves of garlic
2 seasoning peppers (optional)
Dash of red wine or sherry
Olive oil
Oregano
Basil
Fresh ground black pepper

Directions:
Directions:
Finely chop the onion and seasoning peppers (if used). Crush the garlic. Sauté the onions in the olive oil until soft. Add seasoning peppers and cook briefly, stirring. Meanwhile slice the sausage and if uncooked, add to the pan and fry thoroughly. Note: if the sausage has lots of fat, cook first then drain off the grease before cooking the onion, etc. Add the crushed garlic and sauté briefly being careful not too burn. If the sausage is pre-cooked, add now and briefly brown.

Add the tomatoes and mix thoroughly, then rinse out the tin with the wine or sherry and add to the mixture. Add the black pepper and herbs and simmer until the pasta is cooked.

Add the pasta to a serving bowl, toss in the cream cheese then cover with the sauce. Mix thoroughly and serve immediately. Serves two.
