2 1/2 c. sifted flour
1 2/3 c. brown sugar
1 1/4 tsp. baking powder
1 1/4 tsp. soda
1 tsp. salt
1/3 c. oil
2/3 c. yogurt or sour milk divided in half
1 1/2 c. mashed ripe bananas
3 eggs
2/3 c. chopped nuts

Directions:
Directions:
Heat oven to 350°. Grease and flour 13 x 9 or 2 round layer pans. Mix oil, 1/3 cup yogurt/sour milk, and bananas. Add dry ingredients. Beat 2 minutes. Add 3 eggs and another 1/3 cup yogurt/sour milk. Beat 2 minutes more. Fold in nuts. Pour into prepared pans. Bake 35 minutes for layer cake and 45-50 for oblong pan. Frost with whipped cream or vanilla icing made with yogurt and lemon instead of milk.
