1 pork tenderloin, approx 1 lb. 3 Tbsp olive oil, 1 med. onion, halved, peeled and thinly sliced. 2 cloves garlic, finely minced, 6 Tbsp flour, 1 3/4 cup sparkling cider, 2 Tbsp brown sugar, 1 Tbsp grainy mustard, 2 Tbsp balsamic vinegar, 1/2 tsp salt, freshly ground black papper to taste.

cut tenderloin into 1" pieces, place each piece between plastic wrap and pound meat flat into a thickness of 1/2 ", set aside. Sweat onions in 1 Tbsp of oil over med-lo heat till golden, add garlic and saute 2 mins longer, remove from heat and set aside. Dredge meat in flour and fry in same pan as onions, after they are removed, add remaining oil and fry meat quickly until done, 1 to 2 minutes, remove meat from pan. Deglaze pan with 3/4 cup of cider, stir to scrape up bits from pan, dissolving carmelized pork juices, cook for 5 mins to allow sauce to thicken slightly. Stir together remaining cider,mustard, brown sugar,& balsamic vinegar, add to pan and let cook another 5 mins. Put onions and garlic back in pan, then meat, turning occasionally . Cook for additinal 10 to 15 mins. Place meat on platter, scatter onions over top of neat and pour sauce over all.
