6 c. sliced yellow or zucchini squash
1 large onion chopped
3 stalks celery, diced
2 c. milk
2 eggs, beaten
salt and pepper to taste
1 1/2 - 2c. shredded cheese
3/4 c. crushed butter crackers

Directions:
Directions:
Preheat oven to 350°. Bring a large pot of water to a boil. Add squash, onion, and celery and cook until tender but still firm, about 15 minutes. Drain. To the vegetables, add milk, eggs, cheese, salt, pepper; mix well. Transfer to 9x13 casserole dish. Sprinkle with crushed crackers. Bake in preheated over for 45 minutes. Serves 7
