3 c. cooked spinach
1/2 c. liquid from spinach.
1/2 c. buttery cracker crumbs
3 tbsp. flour
1/4 c. minced onion
2 cloves chopped onion
2 tbsp. butter
2/3 c. evaporated milk
1 1/3 c. shredded cheese
2 jalapeno peppers, minced
1 tsp. celery salt
black pepper to taste

Directions:
Preheat oven to 300°. Butter a small casserole dish. Drain cooked spinach, reserving 1/2 cup liquid. Melt butter in a medium saucepan over medium heat. Stir in flour. Mix in onion and garlic, and cook 1 minute. Gradually stir in reserved spinach liquid, evaporated milk, cheese and jalapeno. Season with celery salt and pepper. Mix in spinach. Transfer to the prepared casserole dish and top with cracker crumbs. Bake 45 minutes in the preheated oven, until bubbly and lightly browned. Serves 8
