¼ cup milk
¼ cup water
½ stick unsalted butter
¼ tsp salt
scant ¼ tsp cayenne
½ cup flour
2 eggs
1 cup grated extra-sharp Cheddar

Directions:
Directions:
1. In a small heavy saucepan, combine the milk, water, butter, salt, and cayenne and bring to a boil over high heat.
2. Reduce to moderate heat, add flour all at once and beat with a wooden spoon until it leaves the side of the pan. Beat the mixture for one minute.
3. Transfer to a bowl (I use my Kitchen Aid mixer at this point), beat in eggs one at a time, beating well after each addition, and then stir in Cheddar.
4. Using a medium ice-cream scooper, place ~18 mounds on two parchment lined baking sheets and bake in upper third of 400º oven for about 17 minutes or until golden brown.

May be made one day in advance and kept in an airtight container. Reheat for 5 minutes in a 400º oven.
