4 potatoes, peeled and quartered (white mashing type – not Idaho)

3 carrots, peeled and cut up

1 large onion, peeled and quartered

3 ½ cups of water

2 tsp. salt

Directions:
Directions:
Add vegetables to salted water and boil, covered, until vegetables are fork tender – about 20 minutes. Drain and save 1 ¾ cups of broth. Mash or puree vegetables to desired consistency.

Add:
• 1 ¾ cups of broth
• 1 2/3 cups of cream or half and half

Puree soup and heat just to scalding.

Add:
• ¼ tsp cayenne
• 1/8 tsp celery salt

Reheat and serve.
