1 1/2 c. sugar
3 tsp. baking powder
1 tsp. salt
1/3 cup soft shortening
1 c. milk (plus 1/4 to 1/3 c. milk for icing)
1/3 cup + 1/4 cup chunky peanut butter
2 eggs
3 c. confectioner's sugar

Grease and flour 9" layers or 13x9" pan.

Sift together flour, sugar, baking powder and salt. Add soft shortening, ⅔ c. milk and ⅓ c. chunky peanut butter. Beat 2 mins. Add another ⅓ c. milk and 2 eggs. Beat 2 more minutes. Bake at 350º for 25 mins for cupcakes, 30-35 mins for layers or 40 mins for 9x13 pan.

Peanut Butter Icing:
Stir ¼ c. chunky peanut butter, 3 c. confectioner's sugar and ¼ to ⅓ c. milk together until creamy. Will frost 2 - 9" layers or 13 x 9" pan.
