2 c. chopped chicken
2 hard boiled eggs
1/4 c. chopped onions
1/4 c. chopped celery
1 c. chicken stock
1 c. milk
4 T. flour
4 T. butter
2 c. flour
2 tsp. baking powder
3/4 tsp. Italian seasoning
1/4 tsp. salt
1/4 c. butter
1 1/4 c. buttermilk
1 c. shredded cheddar cheese

CHICKEN PIE: Make white sauce of stock, milk, onions, celery, butter and flour. Add chicken and eggs, salt and pepper. Put in baking dish. Top with pre-baked biscuits; brush with butter and bake at 400 degrees until bubbly.
BISCUITS: Preheat oven to 425 degrees. Combine flour, baking powder, Italian seasoning, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in buttermilk and cheese just until all ingredients are moistened. Divide batter evenly between 18 small buttered muffin cups. Bake 12 to 14 minutes or until golden.
