60 oz. chicken broth
12 cloves garlic unpeeled
1/3 c dry white wine
4 1/2 T unsalted butter
4 1/2 T flour
2 c shredded Swiss Gruyere
salt, pepper
1 T slivered scallion tops

Directions:
Directions:
Combine 6 cups of broth and garlic in large saucepan. Heat to boiling, in a large saucepan reduce heat.
Simmer, uncovered, until garlic is soft...@10 mins.
Strain stock; peel garlic; mash to paste with fork; reserve. Measure stock, add wine and as much remaining stock as necessary to make 6 cups.
Melt butter in saucepan; stir in flour. Cook, stirring constantly over medium heat, 2 mins. Gradually stir in the broth/wine mixture. Cook, stirring frequently, 8-10 minutes. Stir in reserved garlic paste. Gradually stir in cheese; cook until hot. Season to taste with salt and pepper. Ladle soup into soup plates; garnish with scallions and chives.
Serve with hot crusty bread!
