1/2 lb. beef, cubed
Flour
Salt and pepper
16 oz. beef stock
8 oz. can tomato sauce
1 medium onion, chopped
1 clove garlic, minced
1/4 tsp. dried thyme
4 dashes hot pepper sauce
2 small or 1 large potato, cubed
2 stalks celery, chopped
2 carrots, chopped

Directions:
Directions:
1. Season beef with salt and pepper, dredge in flour. Brown in olive oil in a large pot.
2. Add stock, tomato sauce, onion, garlic, thyme, and hot sauce. Bring to boil, then reduce to low. Simmer covered, 1 hour and 30 minutes.
3. Add potato, celery, and carrot. Simmer covered for 1 hour or until vegetables are tender.

This recipe serves 3. Double or triple the recipe for larger families. The long cooking time is worth it, the beef is very tender.
