3 sweet potatoes
1/2 C. brown sugar
1/4 tsp. salt
1/2 tsp. Nutmeg
1 Tbsp. Minced orange peel
3 large apples
1/4 C. orange juice
1/4 C. melted butter

Directions:
Directions:
Pierce sweet potatoes several times with a knife. Cook in microwave for 8 min on high. Add ice to a large bowl of water, immerse potatoes in the ice water bath to cool them quickly. Remove them when they are cool enough to handle. Peel them a slice them into 1/2 inch-thick rounds.

Combine brown sugar, salt, nutmeg, and orange peel in a small bowl and mix until smooth,

Peel and slice the apples into 1-2 inch thick rounds. Arrange potatoes and apples in a microwave-dish, alternating slices. Sprinkle topping over slices, pour orange juice and melted butter over the topping. Cover, microwave on high for 6 minutes.

My Changes

1. I omit the butter and add a can of Apricots (undrained). I also have used canned peaches.
2. I only use1/4 C brown sugar
3. I only use 1/8 C. orange juice-if I am using other fruit.
